Our Bière de Saison is more than just a beer; it's a living, breathing expression of wild fermentation. Crafted with Maris Otter, wheat malt, and oats, this beer undergoes a complex fermentation process that includes two or three strains of commercial saison yeast, alongside various wild and commercial yeast and bacteria. We've isolated Brettanomyces strains from our barrels, cultivated wild yeast from local fruit, and blended in dregs from bottles of mixed fermentation beers we've enjoyed. Additionally, we've added commercial Brettanomyces strains, three Lactobacillus strains, and some Pediococcus. This diverse mix creates a beer that is both dynamic and evolving, offering a unique tasting experience with each batch.


The Art of Mixed Fermentation

Mixed fermentation is a brewing process that involves the use of multiple yeast and bacteria strains to ferment beer. Unlike traditional fermentation, which typically relies on a single strain of Saccharomyces cerevisiae, mixed fermentation incorporates a variety of wild yeasts and bacteria.
